There’s a whole lot here that could be discussed so I’ll limit myself to a couple of points.

Changing the tempo changes the time under tension (total time you were holding the weight) so it’s possible that in a week when you did 7, 6, 5 reps time under tension could have been less than when you did 6/5/4. This would make it hard to compare the two sessions.

My preference is to lift explosively and lower under control.

Progress is relatively fast at the beginning and then slows. Weight is only one loading parameter. I’d recommend trying to get out extra reps before upping the weights even if it mean adding sets. Also don’t be afraid to decrease the weight go for more reps and then work your way up again.
