Or just drop in another rest day although that would mean the split would be over 8 days instead of 7.

It migth be interesting to leave things as they are and just keep adding rest days and see if can do more work (reps or weight) whenever that bodypart day comes around.

If you’re pyramiding sets I really like reverse pyramids for whenever you plateau. They work a treat for me.
